Elegant Chicken Caesar Salad

A perfect meal for a Monday night. You had the whole chicken on Sunday so now use the leftover chicken for this tasty treat. It’s Monday so let’s make it easy but still fun and pretty -let your family decide if it is a salad night or a pita sandwich night and plate as shown and Monday may seem a little more special! Luckily for us, the kids eat the legs and wings on Sunday so this is mainly all breast meat. It does have some thigh, but I always make sure to remove all fat and bones from the meat. My family of four ate all of this. No leftovers tonight! You can substitute bread for the pita bread or mayonnaise for the Caesar salad dressing.

Ingredients

1 teaspoon of balsamic vinegar
Dash of fresh cracked peppercorn
2 cups leftover chicken
1 cucumber peeled and diced into small pieces
1 cup of Newman’s own Caesar dressing or Brianna’s
1 head of romaine lettuce
1 can of drained pitted black olives
1 cup of sliced grape tomatoes
4-6 pita breads cut in wedges or pockets
Lays potato chips or chips of your choice 

Technique

In a small bowl, add balsamic vinegar and pepper. Cut chicken into small bite size pieces and add balsamic vinegar mixture and mix well. Place on large serving tray. Peel cucumber and dice into small pieces. Place on large serving tray. Add ½ cup of the Caesar dressing to a bowl or martini glass as displayed. Cut stalk away from the lettuce. Cut into thin slices for the shredded look. Place on large serving tray. Drain pitted black olives and place on serving tray. Cut grape tomatoes in ½ lengthwise and place on tray. Cut pita bread into wedges or pockets. Serve pita bread and chips on the side
