Prickly Pear Margarita

This is a unique, refreshing treat for any occasion! The prickly pear adds a unique flavor and a fantastic color! Do spend a little more on the tequila because you are making a margarita from scratch. It is worth it! I highly recommend one that contains 100% agave. See my recipe Simple Syrup if you would like to make your own simple syrup. The ingredient amounts will make two servings as shown. Keep in mind these are strong, but you can always use less tequila to suit your taste.

Ingredients

1/4 cup of prickly pear juice – about one 1 prickly pear peeled, blended and strained to remove seeds see How to Peel a Prickly Pear technique if needed
1/4 cup of fresh squeezed lime juice, about 1 juicy lime
1/4 cup of triple sec
1/4 cup of simple syrup
1 cup of good quality tequila
2 cups of ice
Garnish
Lime slices
2 tablespoon kosher salt

Technique

Peel the prickly pear and place in a blender or Magic Bullet and blend until smooth. Strain contents to eliminate the seeds, which can be very hard. Pour strained prickly pear juice into the blender along with all other ingredients and blend until smooth. Place kosher salt onto a small flat dish. Smear squeezed lime around the rim of the margarita glass in order for the salt to stick to it. Salt the rim of the glass by dipping the rim into the salt and moving in a circular fashion until evenly coated. Pour margarita into glass and garnish with a sliced lime.
