Basmati Rice with Dried Figs

You may be thinking that is going to be sweet like a rice pudding, but it only has a hint of sweetness and flavor of cinnamon. Of course you can always adjust the amount of cinnamon to your desired taste and add brown or granulated sugar for a slightly sweeter style of rice. The combination of flavors complements spicy dishes, such as, Spicy Indian Style Chicken quite well.

Ingredients

1 cup of basmati rice
1 – 14 oz. can of lite coconut milk
1 cup of chicken broth
1/2 cup of dried figs cut into quarters (more if desired)
1 1/2 teaspoons of ground cinnamon (more if desired)
A dash of kosher salt
A dash of fresh ground pepper

Technique

In a large pot over high heat add coconut milk, broth and cinnamon and whisk to combine. Add remaining ingredients, stir and bring to a boil. Stir, reduce heat to low, cover and simmer for about 20 – 30 minutes or until all liquid has been absorbed and rice is tender. You may need to add more chicken broth, if rice is not tender after most of the liquid has been absorbed. Stir occasionally. Serve family style and enjoy.
