Chicken Salad with a Poppy Seed Dressing

Hopefully many of my viewers will appreciate that my recipes range from very simple to elaborate.  I am a busy Mom with a very hectic schedule and at times I need to be inventive to put a meal on the table. This recipe is one that was created with what I had on hand with creativity. It is a refreshing salad that would be perfect for a picnic. A great tip for making quick meals like this one during the week is to grill extra chicken on the weekend for a great meal early in the week.  Serves 4.

 

Ingredients

6 pieces of pita bread, each cut into 6 or 8 pie shaped pieces
2 cups of grilled chicken breast, diced into small pieces
1 cup of chopped red seedless grapes
1 cup chopped celery, finely diced
1/2 cup of sliced almonds
1 cup of Briannas brand Home Style Poppy Seed dressing
Dash of fresh ground pepper

Technique

Cut the pita bread and set aside. Combine all remaining ingredients in a medium bowl. Serve individually or family style by placing salad in the center of a plate or platter and arrange pita pieces on a plate. Scoop chicken salad into the pita and enjoy!
