Penne Pasta with Sausage and a Trio of Peppers

This is wonderful robust sauce that features three types of peppers – red, green and orange. As the sauce simmers it takes on the robust flavor of the peppers. The recipe calls for half of each pepper, but one can use more if desired – I add it all! However, some might find it overly robust, so adjust to your preference. Based on the amount of sausage, this recipe will serve four people. The sausage I chose to use in this recipe came from a local butcher in my area. Ingredients

1 lb. Penne Pasta (use less, depending on how many you are cooking for)
Sauce
3 tablespoons of olive oil
1 lb. Italian sausage in casings any kind, mild, hot or sweet about one per person or if whole cut into 4 portions
½ yellow onion chopped
½ of large red pepper washed and seeds removed cut julienne style
½ of large orange pepper washed and seeds removed cut julienne style
½ of large green pepper washed and seeds removed cut julienne style
6 garlic cloves minced
1- 28 oz. can of crushed tomatoes
3- 15 oz. cans of tomato sauce
2 teaspoons of Italian seasoning blend
Fresh grated ricotta salata or parmesan cheese for garnish

Technique

In a large pot, heat olive oil over medium high heat. Add sausage and brown. Add onions and peppers and sauté until soft. Add garlic and sauté for about one minute. Add crushed tomatoes, tomato sauce and dried Italian seasoning blend. Bring to a boil and reduce to low to simmer for about two hours, to make sure flavors blend and sausage is cooked through. Cook penne pasta according to package directions. Serve sauce and sausage over pasta, garnish with ricotta salata or parmesan cheese and enjoy!

Mild Italian – Our traditional, delicious Italian sausage also known as “sweet Italian”.

Sicilian – Our Mild recipe, but we add Scallions, Red Peppers & Shredded Romano cheese. It is still a delicious sweet sausage.

Hot Italian – We take this recipe up a notch! It’s got a nice kick to it, but not too overwhelming!

Kielbasa – Our mouth watering, garlic sausage! If you enjoy garlic…we guarantee this will be a favorite!

Italian Chicken Sausage – It’s become one of our customer’s favorites! Our Mild recipe made with ground chicken instead of ground pork. It’s leaner, healthy and delicious!!
