When I grill chicken breasts, I usually grill more if I can. You can do so much with the leftovers – add it to a salad or a cold pasta dish. Keep that in mind when planning your menu for following days. Lemon Infused Extra Virgin Olive Oil is being used and can be purchased on-line at Spicewood Food Company.
Ingredients
1 1/2 pounds of chicken breasts – larger pieces sliced in half to make thinner
1 tablespoon of Lemon Infused Extra Virgin Olive Oil or regular olive oil
1 tablespoon of jarred or packaged pesto
Non-stick cooking spray
Technique
Prepare chicken breast, by removing any skin or fat. Slice thick pieces in half to insure even cooking times. Place in mixing bowl. Add olive oil and pesto and toss until evenly coated. Spray grill or grill pan with non-stick cooking spray and heat grill to medium high heat and grill chicken until thoroughly cooked. Times may vary depending on thickness and grill type. For this cut of chicken it took 6 minutes on each side. Let chicken rest for 5 minutes, slice and serve. Spray the non-stick cooking spray before you turn on the grill or your burner or if you are using another type of grill. A flare up may occur if you spray it when you have lit the fire.
