Grilled Buffalo Strip Steak

Impress your guests with a new type of meat that is simply done! Buffalo, also known as Bison, is a great alternative to beef, because it is lean and flavorful. It is also reasonably priced, the one shown cost a little over $3.00. Keep it simple, because of the wonderful flavor! I chose the McCormick’s Montreal Seasoning for an extra spice kick. However, kosher salt and fresh cracked pepper would work well too. This was wonderful and grilled to perfection! Serves 4.

Ingredients

4 – 4 oz. buffalo loin New York strip steaks that are boneless
4 teaspoons of olive oil
4 teaspoons of McCormick’s Montreal Steak Grill Mates Seasoning (less if you prefer less spice)

Technique

Coat each filet with olive oil and press one side into 1 teaspoon of seasoning. A little bit goes a long way.  Repeat with remaining filets.  Heat grill or grill pan to medium high heat. Place seasoned side down first on the grill. Grill meat for 5 minutes on each side for medium. Increase or decrease cooking times for preference. Remove meat and let rest for 5 minutes. Plate and serve with your choice of side dish.

Suggested Side Dish

Try Iva’s New Potatoes, Corn on the Cob with a Chipotle Chili Pepper Butter Compound, Latina Style Summer Succotash or Corn, Black Bean and Cherry Tomato Salad.

Suggested Beverage

Try Bogle Vineyards Old Vine Zinfandel (California), Beringer Founder’s Estate Old Vine Zinfandel, Sebeka Pinotage Cape Blend Shiraz (Africa) or Stag’s Leap Wine Cellars Artemis Cabernet Sauvignon (Napa Valley).
