Cheese, Pineapple and Bacon Skewers

This recipe is great for feeding a crowd and can be made quite quickly with ingredients you may already have in your home. Carr Valley brand bread cheese is being used and is a mild cow’s milk cheese or use your favorite mild cheese.

Ingredients

1/2 lb. of Carr Valley brand Bread cheese or your favorite mild cheese
1 – 15 oz. can of pineapple, chunk style or fresh pineapple cut into 2″ – 3″ pieces
2 packages of pre-cook bacon cut in half
Toothpicks

Technique

Coat a baking sheet with a non-sticking cooking spray. Cut cheese into small wedges about a half inch. Drain the pineapple. Wrap a half piece of bacon around the cheese and insert a toothpick through the wrapped cheese and half way into the pineapple wedge. Place on the baking sheet and repeat with the remaining pieces. Place in a preheated oven at 375 degrees for 3-7 minutes. Check often and remove as soon as the bacon is sizzling or the cheese begins to melt. Remove from oven and transfer to a serving platter and enjoy!

Suggested Beverage

Try a Chardonnay or a light red wine.  Try J. Lohr Arroyo Seco Riverstone Chardonnay (California), Wente Vineyards Riva Ranch Chardonnay (Livermore Valley),Parducci Family Farmed Pinot Noir (California) or Bogle Vineyards Pinot Noir (Russian River Valley).
