Grilled Chicken and Vegetables on Rosemary Skewers

We know you’ve grilled kabobs before but have you ever tried using rosemary skewers? Marinate the chicken using this versatile herb and then grill it on the stems. The smoky aroma will have the neighbors peeking over the fence. You will have some rosemary left over so don’t let it go to waste! Search our recipes for another new dish to try.

Ingredients

Chicken
1 lb. of skinless chicken breasts cut into 1 1/2 – 2” pieces
1/4 cup of olive oil
1 tablespoon of rosemary stems removed and minced, reserve stems
1 clove of garlic crushed through a garlic press or 1 cube of Dorot brand garlic
Vegetables
1 small zucchini sliced into ½” pieces
1 pint of grape tomatoes
1 medium red onion cut in half and quartered
1/2 of a yellow pepper, seeds and white pulp removed and cut into 1” pieces
1/2 of an orange pepper, seeds and white pulp removed and cut into 1” pieces
1/4 cup of olive oil
1 tablespoon of rosemary stems removed and  minced, reserve stems
1 clove of garlic crushed through a garlic press or 1 cube of Dorat brand garlic
Garnish (optional)
1 cucumber peeled and thinly sliced
Rosemary sprigs

Technique

Prepare the rosemary skewers by removing all of the rosemary from the stems. You will need 15 skewers, which is about two packages of rosemary from the grocery store or feel free to use your own garden sprigs.

For chicken, add all ingredients to a gallon sized Ziploc bag and massage bag so that chicken is evenly coated. Refrigerate for about an hour or longer, massaging a couple of times.

For vegetables, add all ingredients to a large bowl and mix until vegetables are evenly coated. The vegetable do not need to marinate. Skewer chicken and vegetables, alternating as desired. Grill on medium high grill for about 8 – 10 minutes turning often. Do not be alarmed if some of the tips of your branches catch fire. The flames will die down quickly.
