Caramelized Cipollini Onions

Make ahead and use as a topping for steaks, for pizzas, or maybe your favorite sandwich. They are perfect for caramelizing because their natural sweetness comes out in the cooking process.  In this recipe they are sliced for adding as a topping, but if wanting to use a side dish leave them whole.  They are very cute little onions!

Ingredients

6 cipollini onions thinly sliced
2 tablespoons of olive oil
½ teaspoon of sugar
Dash of Kosher salt

Technique

Heat olive oil in a small skillet over medium high heat. Add onions. Sauté until edges begins to brown. Add sugar and stir until caramelized. Add just a quick dash of kosher salt to intensify the flavor.
