Frenching meat creates a restaurant type of appearance and doesn’t take much time, but you can always ask your butcher to French it for you.  However Frenching is optional.  The ingredient amounts are two servings, but are perfect for sharing with children with smaller appetites. If you have larger appetites it will serve 2 or double the recipe to serve 4.  Smaller chops can be purchased as well. Pair this with Island Rice for a perfect meal!
Ingredients
Porkchops
2 – 6 – 8 oz. thick cut porkchops, Frenched (optional)
Marinade
2 tablespoons of tequila
Juice from one lime
1 teaspoon of kosher salt
1 tablespoon of honey
1 teaspoon of chili paste
Sauce
1 poblano chili roasted, seeds and stems removed and chopped see Roasting Peppers technique if needed
2 tablespoons of olive oil
¼ of a red pepper finely diced
1 cup of pineapple finely diced
1 cup of lite coconut milk
2 tablespoons of finely chopped cilantro
Sprinkle of kosher salt
Technique
Place pork chops in a medium sized deep dish. Combine all marinade ingredients together in a small mixing bowl. Whisk together and then pour over meat and cover with plastic wrap. Place in the refrigerator for at least one hour or until ready to grill.
For sauce, roast pepper see Roasting Peppers technique if needed, let cool, peel, remove seeds and finely chop. Heat olive oil in a small pot over medium high heat. Add red pepper and sauté until tender. Add all remaining ingredients and let simmer on low until ready to top the grilled porkchop.
Preheat a grill to medium high and grill chops on each side for about 5 minutes covered. Keep in mind that grilling times will be different for the thickness of the chop and type of grill that you are using. Pork should be cooked through, but not over cooked. Remove chop from grill and tent with foil and let rest for 5 minutes. Plate and top with the pineapple poblano sauce.
