Sweet and Spicy Latina Style Ribs

Ribs are not only delicious and easy to make, but versatile in the ingredients you add for flavor.  Dump all the ingredients in a pot and cook for two hours and dinner is ready – talk about easy!  This recipe is a cross between a Latin and an Asian take of a sweet and spicy sauce.  The ingredient amounts will serve 2.  Adjust amounts to accommodate the number of people serving.  If you are increasing the ingredient amounts make sure to bake a bit longer.

Ingredients

1 lb. of pork loin ribs
1/4 cup of canned chipotle chili in an adobe (preferably Esparanza brand)
1/4 cup Simple Syrup (If you don’t want to make it, use a purchased kind.)
A sprinkle of kosher salt
Non-stick cooking spray

Technique

Spray a medium to large sized Dutch oven or other large pot with non-stick cooking spray. Place ribs flesh side down into pot. Sprinkle with kosher salt. Evenly spread the remaining ingredients over the top of the ribs. Cover and bake in a preheated oven at 300 degrees for two hours or until meat easily comes off the bones.

Suggested Side Dish

Try Corn, Black Bean and Cherry Tomato Salad or Rice with Pineapple and Coconut Milk.

Suggested Beverage

Try El Conde Gran Reserva Estate Bottled Chardonnay (Chile), Souverain Sauvignon Blanc (Alexander Valley, California), a Corona with a wedge of lime or a Classic Margarita.
