Mixed Greens with Apples, Blue Cheese and Candied Pecans

Create this easy salad in minutes that highlights the wonderful flavors of fall! The candied pecans were purchased from the bulk section of the grocery store, but you can use any sweet type of nut that you prefer.  Serves 2 side salads as shown.

Ingredients

Salad
4 cups of mixed greens
1 Granny Smith apple peeled, cored and cut into 1 inch pieces
1/4 cup of blue cheese
1/4 cup of candied pecans (purchased)
Dressing,
1/3 cup of honey
1/3 cup of balsamic vinegar
3/4 cup of extra virgin olive oil

Technique

Make dressing by whisking together honey and balsamic vinegar and slowly add extra virgin olive oil. Add a pinch of sugar if dressing tastes too bitter. Try a touch of the vinaigrette on a piece of lettuce as opposed to your hand. This will give you a better idea of how it will taste. Set aside and prepare salad ingredients. In a large bowl add lettuce and add a little bit of the dressing at a time and toss to evenly coat. Not all of the dressing will be needed. Divide salad evenly among plates or bowls and top with half of the apples, blue cheese, nuts and serve.
