Scalloped Yams in a Caramelized Glaze with Marshmallows

Using the scalloped method for preparing yams is much easier than the typical method and evenly distributes the glaze and marshmallows. Sweet red yams are being used for their wonderful flavor and a nicer presentation, but you can easily substitute regular yams or sweet potatoes. Serve as a tasty side dish for your Thanksgiving dinner or anytime of year. Let me know if you like this method better then the typical method - I sure did!

Ingredients

4 large red sweet yams about 4 lbs. or regular yams or sweet potatoes, peeled and thinly sliced
1/2 cup of butter melted
1/2 cup of brown sugar
1/2 cup of honey
1/2 cup of water
1- 16 oz. bag of large marshmallows
A sprinkle of kosher salt
Non-stick cooking spray

Technique

Peel and slice yams or sweet potatoes. If you can use a mandolin to slice the yams or sweet potatoes so they are more uniform in thickness. Place into a large bowl. In a large pot over medium heat melt honey, sugar, butter, marshmallows and a sprinkle of kosher salt whisking frequently so it will not burn. Once melted, pour over the yams or sweet potatoes and toss until evenly coated. Pour into a large baking dish sprayed with non-stick cooking spray. Cover and place into a preheated oven for 1 hour at 375 degrees or until tender.
