Sautéed Spinach with Garlic

A fabulous side dish that goes with most entrées.  The trick is to not over cook the spinach.  Remove at the semi-wilted stage.  If mixture seems a bit dry add a few sprinkles of water as opposed to more oil, to prevent it from being greasy.

Ingredients

1 – 9 oz. bag of fresh spinach chopped about 8 cups firmly packed
2 large garlic cloves minced or pressed through a garlic press about 1 tablespoon
1 tablespoon of olive oil
Parmesan cheese for garnish

Technique

Using a large skillet, add olive oil and sauté garlic over medium heat for about 30 seconds.  Add spinach and continue to sauté until semi – wilted, about 2 minutes.  Serve family style or plate and garnish with parmesan cheese.
