Not only does this meal feel like comfort food but has the touches of gourmet as well. That is why I added the fancy Waterford glasses! Sometimes a few extra presentation and decorating touches can add to the nuance of the dinner regardless of what you are serving. Even though I am calling it a French dinner the entrée is actually a cross between French and German with sauce and the späetzle is normally considered a German dish. Because the Dijon region is close to Germany the food naturally becomes intermingled as in this entrée.
