Apple Fume Blanc Sauce

Fume Blanc is a perfect wine for cooking and drinking for those that do not like Rieslings. The addition of brown sugar and cinnamon will compensate for the sweetness found in a Riesling. The perfect Fume Blanc for this dish is Becker Vineyards Fume Blanc. With the ingredients used for the sauce, it will only have a hint of sweetness. It is perfect over pork or chicken.

Ingredients

2 tablespoons of butter
2 gala apples or apple of your choice, peeled, cored and cut into 1/4” dice
1 1/2 cups of Fume Blanc
2 cups of chicken broth
3 tablespoons of brown sugar
1/8 teaspoon of cinnamon
2 tablespoons of cornstarch
2 tablespoons of water

Technique

In a large cast iron skillet or regular skillet melt butter over moderately high heat. Add diced apples to skillet and cook over medium heat until slightly browned. Add Fume Blanc, chicken broth, brown sugar and cinnamon and reduce by one half. To thicken, make a thickening agent of cornstarch and water and gradually whisk into boiling sauce over high heat. Sauce will not thicken until brought to a boil. Serve over meat or on the side.
