Wake your family with the wonderful aroma of all of fresh herbs cooking in a delicious frittata. This frittata has eggs and potatoes so it is robust enough to kick off the morning right and keep your family going until lunch, especially your kids. Ingredient amounts serve four.
Ingredients
3 small potatoes scrubbed and thinly sliced about 1/8 of an inch if you can or use a mandolin to make sure sizes are uniform for cooking time
Non-stick cooking spray
2 tablespoons of vegetable oil
8 pre-cooked bacon slices, chopped into small pieces
1 green onion thinly sliced
3 sprigs of thyme, tarragon and oregano, stems removed and finely chopped
1 large sage leaf, stem removed and finely chopped
4 eggs
2 tablespoons Greek yogurt or sour cream
Kosher salt
Technique
Thinly slice potatoes and spray with a non-stick cooking spray, sprinkle with kosher salt and place into a preheated oven at 375 degrees for 20 minutes. Remove and dice into smaller pieces. Set aside. Heat oil in a medium sized non-stick skillet over medium high heat. Add bacon, green onions and finely chopped herbs and sauté until aromatic about 1 – 2 minutes. Add potatoes and continue to sauté. Remove from burner and set aside. In a blender or magic bullet blend together eggs, yogurt or sour cream and a sprinkle of kosher salt until frothy. Generously spray the edges of the skillet containing the herb and potato mixture to avoid any sticking of the frittata. Return to burner and add the frothy egg mixture. Cover for a minute or two. Using a spatula, carefully check the underside of the frittata to make sure that it is not burning. Once frittata is a golden brown, using the spatula again go around the sides of the pan to make sure that the frittata is not sticking to the sides. While doing so try to angle the spatula towards the center to again make sure that nothing is sticking. Place a large plate over the skillet and flip the plate over along with skillet. The frittata should easily come out onto the plate. Gently slide the frittata back into the skillet to finish cooking the underside. Cover and repeat above process, with spatula and the plate. Once done serve on the plate and enjoy!
