Arugula with Pears, Blue Cheese and Candied Pecans

I love arugula because of its nice peppery flavor!  I add it to sandwiches, paninis and anything else I can think of that it would pair well with.  The combination of the peppery arugula and the, semi-sweetness of the pear, the pungent blue cheese and sweetness of the candied pecans are a perfect combination.  Plus this is very easy to make because I am using purchased candied pecans and a store bought dressing.  If you can’t find candied pecans use any candied nut of your choice. Serves 2 or make smaller portions for 4.  If choosing to make smaller portions increase the amount of blue cheese and nuts.

Ingredients  

4 cups of arugula
1 pear of your choice, cored and diced (I chose red for the pretty color)
2 tablespoons of crumbled blue cheese divided between each salad (more or less to your liking)
2 tablespoons of purchased candied pecans or candied nut of your choice divided between each salad (more or less to your liking)
1/3 cup of Ken’s Fat Free Raspberry Pecan Dressing
Freshly ground pepper

Technique

Rinse, dry, core and dice pear and set aside.  Add arugula and dressing to a large bowl and toss to evenly coat greens.  Divide among bowls, top with diced pears, blue cheese and nuts.  If desired add fresh ground pepper and serve.
