Serve as a dip or as an accompaniment to any Mexican dish. Make it festive by sipping one of my margaritas – Classic Margarita, Prickly Pear Margarita, Guava Margarita or Island Margarita.
Ingredients
Pico de Gallo
1 cup of a yellow onion diced
2 tomatoes diced
2 jalapeño peppers minced, stem and seeds removed
½ cup of cilantro minced, stems removed
Juice of 1 lime
½ tablespoon of lime infused olive oil or regular olive oil
Guacamole
3 ripe avocados
1 teaspoon of kosher salt
Juice of ½ of a lime
Technique
Make pico de gallo by mixing all ingredients in a large bowl. In a small bowl add all guacamole ingredients and mash avocado. Transfer avocado to pico de gallo and blend well. Place in your favorite serving bowl and serve with chips.
