Smoked Salmon Breakfast Panini

Panini’s are a wonderful sandwich and are not just for lunch or dinner. This one is a great breakfast Panini that is a take on a traditional New York style bagel with the fixings. The ingredient amounts will make one sandwich and can be doubled or more depending on how many people are eating.

Ingredients

1 loaf of Ciabatta bread, cut desired amount from bread (about 4 inches by 6 inches for each sandwich) and sliced in half
2 tablespoons of 1/3 less fat plain cream cheese
4 pieces of smoke salmon depending on how it is sliced and the thickness of it
2 slices of a garden fresh tomatoes or vine ripened tomatoes
2 thinly sliced rings of a red onion or 1 tablespoon of diced red onion
Olive oil for brushing outside of bread or use non-stick cooking spray

Technique

Spread cream cheese on the bottom piece of bread. Add smoked salmon, tomatoes and onion. Brush bottom and top outside pieces of bread with olive oil or spray both bottom and top pieces with non-stick cooking spray. Cook on a preheated Panini grill for about 3-4 minutes. You may have to use a spatula to keep the Panini in place as you press down on it and lock it in place. Basically you are pushing it in as it tries to push itself out as you press down on the sandwich.  Remove after 3-4 minutes.  The sandwich should a golden color as shown above.  Serve immediately.
