What a wonderful way to serve chicken! Adults and children alike enjoy this wonderful presentation! Eat as you would corn on the cob. Be careful, because the tip is sharp and kids may want to eat as a lollipop. You may have to remove chicken from skewer before eating. The seasoning being used is unique and has a wonderful smell and gives the meat a smoky flavor without smoking the meat. This seasoning even though it is a salt is not overpowering in flavor. This particular one was purchased in the bulk section of HEB a Texas-based grocery store. You can try other variations that may be available in your area that have a smoky flavor. Keep that in mind if trying to find a substitute. Or use one of your favorite seasonings to make it uniquely yours. Even though the prepackaged thinly sliced chicken may be a bit more per pound, it will be worth the time saved in deboning the chicken yourself. What I have found useful is to watch when this item goes on sale. I will purchase it, freeze it and have it when I don’t feel like doing any extra work. Another thing that I have found useful is to remove the chicken from its package, place in a bag and my marinade or seasoning ingredients and freeze it until it is needed. Thaw before cooking. Ingredients
Chicken
1b. of thinly sliced chicken, about 7-8 pieces
2 tablespoon of olive oil
1 tablespoon of Chihuahua de Mexico wood smoked salt
juice of 1/2 of lime
7 – 8 bamboo or wood skewers, soaked in water to prevent burning
Dipping Sauces (optional)
Jarred salsa verde
Greek yogurt or sour cream
Technique
Place chicken oil, lime and seasoning into a Ziplock bag. Gently massage chicken to evenly distribute the seasoning. Place in the fridge and marinate for at least 4 hours or over night. Soak skewers in water for at least 30 minutes. They may still burn but this will prevent them from completely burning all the way through. Skewer the chicken and place on preheated grill on medium high heat and grill for about 4 minutes or until the first side begins to brown. Turn and grill second side for 4 minutes or until the second side begins to brown. Make sure chicken is thoroughly cooked, no pink should be present on the inside. Cooking times will vary on how thin your chicken is and the type of grill you are using. Serve with dipping sauces if using and enjoy!

Try Classic Margarita, Citrus Sangria or Cuba Libre or a Mexican beer try – Modelo especial, Dos Equies or a Corona with a wedge of lime. For kids try Sidral Mundant, which is an apple soda, Sidral Manzana Verde, which is a green apple soda and Barrilitos Fruit Punch. These can be found in the Ethnic section of most large grocery stores or in Mexican stores.
