I love to cook with various seasonings, because they add a lot of flavor without the fat. I also love to experiment with different seasonings. This is a unique becasue it creates a smoked flavor without a smoker. This particular spice was purchased at HEB, a Texas-based grocery chain. It is found in their bulk food/spice section. Ingredients
Pork
1 lb. of pork tenderloin one whole tenderloin
2 tablespoon of olive oil
1 tablespoon of Chihuahua de Mexico wood smoked salt
1 quart sized Ziplock bag
Condiments (optional)
Tortillas flour or corn
Salsa verde
Sliced avocados sprinkled with fresh lime juice and kosher salt
Sliced tomatoes
Greek yogurt or sour cream
Technique
Place pork, oil and seasoning into a Ziplock bag. Gently massage pork to evenly distribute the seasoning. Place in the fridge and marinate for at least 4 hours or preferably over night. Preheat a grill or grill to medium high heat and sear the tenderloin on all sides to lock in the juices. Lower heat to medium or move to a cooler part of the grill and continue to cook for an additional 30 minutes. Turning often so that it does not burn. Total cooking time will vary depending on the type of grill you are using and the size of the pork. The center should be thoroughly cooked. Do not cut into it until it has rested. Remove the pork from the grill and let it rest for about five minutes. Slice it on an angle and eat by itself or serve on tortillas with the above condiments.

Try our Classic Margarita, Citrus Sangria or Cuba Libre or a Mexican beer try – Modelo especial, Dos Equies or a Corona with a wedge of lime. For kids try Sidral Mundant, which is an apple soda, Sidral Manzana Verde, which is a green apple soda and Barrilitos Fruit Punch. These can be found in the Ethnic section of most large grocery stores or in Mexican stores.
